Chicken and Penne Casserole

6 boneless chicken breasts

Salt and pepper

1 medium onion, chopped

6 medium garlic cloves, minced

1 tablespoon dried oregano

1 teaspoon dried red pepper flakes (or to taste)

1 (28 oz.) can crushed tomatoes

1 (14 oz.) can stewed tomatoes (with juice)

1 -2 teaspoon sugar

1/2 cup dry white wine

1 large bay leaf

10 oz. (280 g) dry penne pasta (cooked al dente and drained)

2 cups mozzarella cheese, grated

2/3 cup grated parmesan cheese, divided
